Class Descriptions

August 6th: PASTA! How to make it, cook it and serve it
Everyone loves pasta, and the variety of flavors, shapes, sauces and uses seem endless. Tonight
take a step-by-step-look at making pasta from scratch, pairing the shape to the pasta sauce and
serving it up to your family and friends in easy but delicious ways. This class is offered for the first
time as an afternoon class (12:00 to 2:30 pm) or an evening class (6:00 to 8:30 pm) on this
date. Same fresh pasta, wine and fun at either time slot.

August 8th: Tuscan Sophisticated-Rustic at Vino Noceto Winery*
The sun kissed hills of Tuscany offer a simple peasant cuisine which belies the urban sophistication
of Florence and other cities in the region. This class is a look at how ingredients and techniques
span both styles of cooking, creating masterful Italian classics you can create in your own kitchen.
Vino Noceto wines will be the perfect choice to sip as we go “on the road” and learn and dine
al fresco. This class to be held at Vino Noceto Winery, Dixon Road, Plymouth (www.noceto.com).
*Noceto Winery is located 5 minutes from “downtown” Plymouth

August 14th: The Traveling Plate: Authentic Mexico
Bring on the heat with the fiery flavors of summer in Mexico! The focus of the class will be such
mainstream classics as tamales, salsas and ceviches, but also the road less traveled with seafood
preparations and fresh, simple grilled meats, perfect for lively afternoons outside. Spanish wines
will be our focus tonight and Chef Beth will share her recipe for the Coolest Sangria. Come early
and shop the Farmers Market outside in the park before class.

August 16th: Simply Delicious Seafood
We all know the “bounties of the sea” are some of the most delicious and healthy foods we can
eat and Chef Beth will show you great, foolproof techniques to cook and serve these treasures
including poaching, sautéing, grilling and even smoking seafood at home. This is a very popular
class so reserve your spot early.

August 21st: Light, Bright & Sneaky – Clever ways to cook and eat healthier
We all know we need to cut back on fried foods, sugary foods and all things beige – but how do
you get your friends and family to eat all that green stuff? The answer is blatant subterfuge and
you won’t be allowed to leave until you‘ve learned at least a dozen practical everyday ways to
“lighten up” without losing flavor. You’ll be amazed at how delicious super nutritional foods can
be and how you can adapt your favorite recipes, feed it to your kids and feel good about the
whole thing! (The best part is Dinner will not be a salad bar buffet.) Come early and shop the
Farmers Market outside in the park before class.

August 28th: Deep Southern Roots – Country Classics from the Deep South
Shrimp Etouffe, Chicken Gumbo, Grits, BBQ Pork, Hush Puppies, Sweet Corn Casserole,
Southern Greens, Pecan Pie – if your mouth is already watering this is the class for you.
Chef Beth shares her favorite childhood food memories, including some sassy recipes from
New Orleans to give you a whole range of dishes designed to celebrate country traditions
and to “put some South in your mouth”. Come early and shop the Farmers Market outside
in the park before class.
